Grouting choice for slate floor?

I'm getting ready to install 16x16 India slate in a 150sf bathroom (radiant concrete slab on grade). I'll be sealing the floor. I like the look of groutless joints. Given the variety of tile thickness and or the fact that this is a bathroom, would going groutless pose either installation or maintenance challenges?
